“Riced” cauliflower stir fry


I always LOVE trying new recipes, especially if they are a healthy version of a “loved” meal and who doesn’t love fried rice! I try to stay away from grains for the most part and rice is not something I typically eat unless it is with some fresh sushi ;)


So, I came across this recipe and decided to give it a try. I could not believe how delicious it was…My family loved it as well!!!


I have to be honest, I was alittle skeptical but it definitely surpassed my expectations which is why I wanted to share it with you. It is a definite keeper in my house! Give it a try and please let me know what you think!

cauliflower fried riceIngredients:

  • 1 head cauliflower
  • ¼- ½  red onion chopped
  • 2 small carrots chopped
  • 2 slices of nitrate-free bacon (as you can guess, I did not use ;) )
  • chopped bok choy (I used spinach)
  • ½ cup frozen peas
  • 2 eggs
  • olive oil
  • salt, pepper
  • cumin
  • cayenne pepper

** I cut up thin chicken breast into cubes, seasoned, cooked in pan and put in afterwards


***You can add any veggies you like, whatever you have in fridge…these are just the ones in the recipe.

Directions:

  1. Grate cauliflower by hand with cheese grater or cut in quarters and pulse in food processor
  2. Heat Olive oil in pan and add riced cauliflower-saute for a few minutes. Add a few ounces of water to steam/soften the cauliflower
  3. Add in red onion, carrots, bacon, bok choy (spinach) and frozen peas. Cook until veggies soften and bacon cooks through.
  4. Add scrambled eggs and season
  5. I just sprinkled some salt, pepper, cumin, cayenne (add whatever you like) I also am thinking of adding soy sauce next time.
  6. In another pan, sauté cubed chicken. Season as you want…I added same seasonings
  7. Add to riced cauliflower and serve.


It was better than I could of imagined….Please let me know what you think.
